- It's Low Carb and Keto Friendly. So you gals have asked for more weight loss recipes and now it's here. Tho I do not recommend a fully low carb keto vegan diet, this recipe is perfect for the occasional low carb vegan meal. This recipe uses of Monkfruit and arrowroot flour which keeps this dish low carb.
- It's Filling. Jackfruit is very filling. It's low carb on its own yet when you serve it with your favorite low carb veggies you will still feel satisfied.

I have been a customer of Karuna Beverages over the last couple of years and I'm amazed at the growth of their products. How to make this JackFruit Recipe: (READ FULL RECIPE CARD BELOW FOR FULL INSTRUCTIONS)
First grab a small dish and make your glazed sauce. Next you will add vegan butter to a hot cast iron until it melts and slowly add your sauce until it thickens. Once it starts to bubbles slowly add in your jackfruit and cover with glazed sauce evenly allowing it to simmer for a few minutes. Garnish with sesame seeds and green onions if you desire.

Jackfruit is the Vegan With Curves star of this dish! Jackfruit is the vegan with curves star ingredient. Jackfruit grows abundantly in southwest India. Jackfruit is a fruit known for it's meaty like texture and is huge in the vegan community as natural plant based substitute. Like tofu, it absorbs whatever flavor you seasoning it with. It is usually used as a pull pork substitute but can also be used in curries, tacos, and even dips! This particular vegan jackfruit recipe works perfectly for stir fries and by far is the BEST jackfruit recipe I have ever had.
How to make this Curve Building (Weight Gain) Friendly?
Normally I would be telling you how to make this recipe Weight Loss friendly but since this dish is already low calorie here we are doing the opposite.
- Double the portions. Instead of 4 servings make it 2 servings.
- Serve with healthy curvy carbohydrates. Serve with sweet potatoes or your choice of rice.

The BEST Vegan Jackfruit Recipe
Ingredients
- 2 cans jackfruit in brine or water NOT IN SYRUP
- ยฝ cup Karuna’s Whole Plant Tonic Mango and Goji Berry Beverage
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- ยผ cup liquid aminos
- 4 teaspoons monk fruit sugar
- 1 tablespoon apple cider vinegar
- 1 tablespoon arrowroot powder
- 3- 4 tablespoons vegan butter
Instructions
- Open your cans of jackfruit and drain off the excess liquid. Set aside.
- Grab a small size bowl and begin to assemble your glazed sauce ingredients. Add Karuna’s Whole Plant Tonic Mango and Goji Berry Beverage, garlic powder, ginger powder, coconut aminos, monkfruit sugar, apple cider vinegar, and arrowroot powder and mix together well until fully combined. Taste mixture and adjust flavor to your liking. (NOTE: Keep in mind adding more monk fruit sugar will increase carbohydrates)
- Next grab a large pan and heat up your vegan butter on medium high until it melts. Once butter has melted turn down heat and slowly add your glaze mixture. Stir constantly until sauces starts to thickens and bubbles. It will thicken fast within 2 to 3 minutes.
- Once it starts to bubbles and thickens add your jackfruit. Cover evenly as possible with the sauce and allow it to simmer for about 5 minutes uncovered. In the last few minutes of cooking you may garnish with green onions and/or white/black sesame seeds. Remove from heat and serve with bok choy, cauliflower rice or your favorite vegetable. If you are not low carb you may serve with rice.

- Has Net Carbs of 7 g
- If you are not on a Vegan Keto Diet or you are looking to use this recipe in a weight gain regimen, serve with veggies AND your favorite carbohydrate.
- May use coconut aminos instead of liquid aminos but keep in mind that will boost the carbs if you are on Vegan Keto.
- May use organic cane sugar instead of Monkfruit and also corn startch instead of arrowroot flour but keep in mind that will boost the carbs if you are on Vegan Keto.
- Xantham Gum WILL NOT work for the glaze sauce. It's too "gummy" and it created an horrible texture for the sauce when I tried it.
- If you do not have access to Karuna Beverages you can subsitute with orange juice.
