The BEST Vegan St Louis Fried Rice

I can say with pure confidence that my city, St. Louis, MO, has the BEST fried rice in the country! And now you can eat St. Louis Fried Rice as a vegan!

Equipment

Ingredients

  • 4 tablespoon peanut oil, divided (or any vegetable oil you like)
  • ¾ - 1 cup JUST Egg note 2
  • ½ large white onion, chopped
  • 3 ½ cup cooked long grain white rice (day old) note 3
  • 3 tablespoon dark soy sauce note 4
  • 2 tablespoon light or regular soy sauce
  • ½ teaspoon garlic powder
  • ¼ - ½ teaspoon Accent (MSG) note 5
  • green onions
  • fresh bean sprouts optional

Instructions

  • Add 1 tablespoon of peanut oil and place it on your burner over medium high heat. Shake the bottle of JUST Egg well and pour in ¾ - 1 cup. Shake the skillet slightly to distribute the liquid evenly and let it sit for 15-30 seconds allowing it to to form at the bottom before stirring.
  • Scramble like an egg using a spatula to scrape and pull mixture across pan, while breaking it up into fluffy scrambled pieces for about 1-3 minutes. Once done, remove heat, and transfer cooked just egg into a bowl. Set aside.
  • Place that same Wok on medium high heat and add in 3 tablespoons of peanut oil. Add in chopped white onions and cooked until onions begin to soften for 2 -3 minutes.
  • Next add in cooked white rice, dark soy sauce, light regular soy sauce, garlic powder, and Accent. Stir together completely combining the seasonings with the rice and onions and fry rice for about 3-5 minutes. The rice should be a nice dark, and rich brown color. Taste and adjust seasonings to your liking.
  • Turn down heat to medium low and add in green onions, bean sprouts, and your cooked JUST Egg and mix together until combined for about 1- 2 minutes. Allow to cool for 5 minutes. Serve with a vegan St. Paul Sandwich and enjoy!

  1. WOK: Stir frying rice is the BEST way to get an even coat on your fried rice but if you don't have one, use whatever you have on hand.
  2. JUST Egg: Just Egg is the most realistic vegan egg on the market right now which is why I used it in this recipe. But if you don't have this on hand (or prefer not to use it), you can substitute for tofu scramble or mung bean scramble.
