Have you ever wondered how to make Homemade Peanut Butter Cups? Well, now you can put your curiosity to rest. Homemade Peanut Butter Cups are super easy and fun to make! And yes these are vegan!
Line a muffin tin with 9 muffin liners. Set aside.
Grab a double boiler or a heatproof glass bowl and place over a pot of boiling water. Add vegan chocolate chips, coconut oil, and vanilla extract and stir until completely melted. Set aside.
In another medium bowl, stir all peanut butter and coconut nectar together until smooth. Be sure to use natural peanut butter as it still contains the oil making it easier to stir. If you don't have natural peanut butter on hand, add a little bit of coconut oil or heat up in the microwave for 10 - 15 seconds just enough to get it liquid enough to stir. Set aside.
Start assembling your first chocolate layer. Scoop chocolate layer into each muffin cup filling up all 9 cups. Next add the peanut butter layer, using all the peanut butter topping over the chocolate layer. Lastly, add the remaining chocolate on top of the peanut butter.
Place homemade peanut butter cups in the freezer for 30 minutes or until firm. They store great in both the freezer and fridge. Enjoy!

This will work great with almond or cashew butter!
Use your favorite liquid sweetener if you cannot access coconut nectar.
