Apple Peanut Butter Bars

Homemade Apple Peanut Butter Bars are the perfect make ahead breakfast ready in just 30 minutes! Made with sweet homemade apple butter, these bars can also serve as a healthy dessert!

Instructions

  • Preheat oven to 350°F (175°C) degrees. Line an 8x8 baking pan with parchment paper or lightly spray with oil and set aside.
  • In a small mixing bowl combine the crust ingredients: oat flour, old fashioned oats, apple butter, peanut butter, and plant based milk until a soft dough forms. Take a little over half the mixture and press into the parchment paper lined pan.
  • Next begin spreading as much or as little apple butter mixture over the crust. and top with the crumble topping. Bake 20 minutes.
  • Once done baking allow it to cool for 10 minutes before cutting into bars. Serve as a sweet breakfast or as a healthy dessert!

  1. SPELT FLOUR: Any flour (for the most part), should work for this recipe if you do not have spelt flour.
  2. CROCKPOT APPLE BUTTER: My Homemade Crockpot Apple Butter is much less sweeter than the ones in the store. But if you do not want to make your own, it is okay to use the store bought one. If you do use the apple butter recipe, you will want to make it ahead of time.
  3. STORAGE: These bars will store in the refrigerator for up to 7 days and in the freezer for up to 1 month.
