If you love fried oyster mushrooms, air fried oyster mushrooms are just as crispy, meaty, and satisfying with a little less fat!
I know what you are thinking, it is about time came up with a air fried version of my popular fried oyster mushrooms recipe. Well here it is!
It took me some time to perfect this recipe but I am happy to say you now can enjoy your favorite fried food, without the additional oil. You can even use these in a vegan po boy sandwich!
These air fried oyster mushrooms are still crispy, tender, juicy, and very satisfying.
Ninja Foodi Air Fryer
For this recipe, I'm using my Ninja Foodi Cooker! It's an electric pressure cooker, air fryer, slow cooker, oven, stove-top, steamer, and dehydrator all in one!
I use this cooking in appliance often like in another oyster mushroom recipe like my Oyster Mushroom Jackfruit Pot Roast. However any air fryer would work.
One tip you need to know is when air frying to NEVER use aerosol cooking spray in a can as it can leave residue on the air fryer basket. Instead add some oil in a Misto to protect your appliance.

Ingredients for Air Fryer Oyster Mushrooms
- oyster mushrooms
- spelt flour (high protein and easier to digest)
- breadcrumbs
- spices and seasonings of choice
- cornstarch
- baking powder
- plant based milk
- mustard
- oil for air frying in a Oil Sprayer Bottle
How to Make Air Fried Oyster Mushrooms

Prep Oyster Mushrooms and Make Batter
- Clean oyster mushrooms. (Photo 1 & 2)
- In a mixing bowl add flour, seasonings, and milk to create a wet batter. In a separate bowl, add flour and seasonings to create dry batter. (Photo 3 & 4)
Batter Oyster Mushrooms and Air Fry
- Batter oyster mushrooms in wet batter and then batter in dry batter. (Photo 1 & 2)
- Air fry for 10 -12 minutes. Once done, serve with your choice of dipping sauces. (Photo 3 & 4)
Substitution, Cook, & Storage Tips

- Reheat air fried oyster mushroom in an air fryer to keep them crispy.
- This recipe will keep in the refrigerator for 1 to 2 days covered. It is not freezer friendly.

Air Fried Oyster Mushrooms
Ingredients
- 1 package oyster mushrooms (app. 0.75 - 1 pound)
- grapeseed oil in spray bottle (for air frying)
Wet Batter
- 1 cup spelt flour note 1
- 1 tablespoon baking powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- 1 teaspoon mustard
- 1 cup plant based milk
Dry Batter
- 1 cup spelt flour note 1
- ½ cup bread crumbs note 2
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- 1 teaspoon cornstarch
Instructions
Clean
- Take a damp paper towel and begin to wipe down your oyster mushrooms (this is how you clean mushrooms). If you rinse them instead, be sure to pat them dry with a paper towel. Set aside to begin making your batter
Wet Batter
- Start making your wet batter. Place 1 cup of spelt flour in a large mixing bowl along with baking powder, onion powder, garlic powder, sea salt, black pepper, mustard, and plant based milk. Mix until combined.
- Batter should be the right consistency to coat mushrooms; not to thick and not to runny. It will seem runny at first but will thicken as it sets. Set aside.
Dry Batter
- Grab a bowl 1 cup of spelt flour, breadcrumbs, onion powder, garlic powder, sea salt, black pepper, and cornstarch. Mix until fully combined. Set aside.
- Next coat each oyster mushroom in the wet batter ONCE and place it in the the bowl and evenly coat with the dry batter ONCE. Do that for all pieces. DO NOT GO BACK IN FORTH BETWEEN THE WET AND DRY BATTER TO PREVENT OVER BREADING IT WILL NOT TASTE WELL!
- Place mushrooms in air fryer basket making sure not to not over crowd them. (I air fried these in three separate batches). Lightly spray grapeseed oil on top of mushrooms. Flip over and spray more oil on the opposite side. Cook at 400°F (205°C) for 10-12 minutes until it is nice and crispy.
- Serve with your favorite dipping sauces, on top of a salad, or along with your favorite sides for dinner!
Notes
- SPELT FLOUR: You can use any flour you desire or that you have on hand.
- BREAD CRUMBS: You can replace crushed cornflakes with bread crumbs. That will keep them crispy.
- SPICES

- REHEAT: Reheat air fried oyster mushroom in an air fryer to keep them crispy.
