    These vegan chocolate popsicles are creamy, sweet, and vegan! They are so easy, it only takes 5 ingredients to make! Sure to keep you cool this summer!

    Nothing saids summertime more than popsicles! These vegan chocolate popsicles will be sure to cool you down as well as satisfy your sweet tooth!

    Wait, is chocolate vegan?

    Yes and no.

    Yes, pure chocolate is vegan by default as it comes from the pod of the cocoa tree.

    But no, it stops becoming vegan when white refined sugar (typically processed through bone char) and dairy milk fat is added to it.

    So Where do I find Vegan Chocolate?

    Pure chocolate is pretty bitter (though pure chocolate has TREMENDOUS nutritional benefits). So look for semi-sweetened chocolate chips (or chucks) labeled "vegan" or "dairy free" "whey free" and "casein free".

    How to make vegan chocolate sauce?

    You simply melt some vegan chocolate chips (or chucks) with the plant-based milk of your choice. We are making these vegan chocolate popsicles using Karuna Beverages.

    I've used both the  Synergy Black Sesame and Coconut Coffee Blend and the Whole Plant  Cacao, Chestnut, and  Pear Smoothie. Both will work for this recipe! (Karuna Beverages are now available on Amazon!)

    The coffee blend adds a nice energy boost while the smoothie blend gives an extra boost of chocolate because of the cacao! You can't go wrong either way!

    How to make vegan chocolate popsicles?

    *Please read detailed and printable recipe card below for full ingredients and instructions.

    Making the Vegan Chocolate Sauce

    1. Grab your vegan chocolate morsels and your chosen Karuna's Beverage and melt over a double boiler. (Photo 1 & 2)
    2. Once fully melted, set aside and allow to cool. (Photo 3 & 4)

    Making the Vegan Ice Cream and Assembling Popsicles

    1. Add frozen bananas, vanilla extract, dates and your chosen Karuna's Beverage to a high-speed blender.  Blend until smooth. (Photo 1 & 2)
    2. Add chocolate sauce,  ice cream, then more chocolate sauce as the last layer.  (Photo 3 & 4)

    Freeze Overnight

    1. Cover and add Popsicle sticks. Then place in the freezer for at least 5 hours but preferably overnight. (Photo 1 & 2)
    2. When ready to eat, be sure to thaw out for a few minutes before pulling it out the mold. (Photo 3 & 4)

    Substitution, Cook, and Storage Tips:

    • You can stick molds in warm water (NOT HOT) for 15-30 seconds to slightly loosen them up.
    • Don't worry if it's not a perfect mold. Creamy based popsicles will be less than perfect than ones made from fruit juices. Don't sweat the "perfection" of them because the taste will be there!
    • You can mix in the chocolate sauce with the ice cream if you like to create a swirl effect.
    • There will be leftover chocolate sauce. You can use it on top of Peanut Butter Banana Ice Cream and/or even pancakes!

    Vegan With Curves Star Ingredient:

    Cocoa is the Vegan With Curves star ingredient of this recipe. Cocoa contains a healthy amount of fat full plant-based fats.

    To make this more weight loss (waste/weight release friendly) you could:

    • Use a sugar alternative (like monk fruit or stevia) instead of dates.

    Ingredients

    Chocolate Sauce

    • 1 cup vegan chocolate chips
    • 1 cup Karuna's Coffee Blend or Whole Plant Smoothie

    Ice Cream

    • 1 cup frozen bananas
    • 1 cup Karuna's Coffee Blend or Whole Plant Smoothie
    • 3-4 medium dates
    • 1 teaspoon vanilla extract
    US Customary - Metric

    Equipment

    Double Broiler
    Vitamix Blender
    Popsicle Molds

    Instructions

    Chocolate Sauce

    • Grab a double boiler or a heat proof glass bowl to place over a pot with boiling water.
    • Add vegan chocolate chips and Karuna's Coffee Blend or Whole Plant Smoothie.
      Mix constantly until melted.
    • Once fully melted, remove from heat CAREFULLY. ( NOTE: If using a heat proof glass bowl...WEAR HEAT PROOF GLOVES).
    • Allow cool for 15 to 20 minutes.

    Ice Cream

    • Add frozen bananas, dates, vanilla extract, and the remaining of your Karuna's Coffee Blend or Whole Plant Smoothie to a high speed blender.
    • Blend until smooth.

    Assemble Your Popsicles

    • Grab your Popsicle molds and add a layer of chocolate sauce to 4 molds only filing up half the mold.
    • Next add your ice cream on top making sure not to overfill each mold. Then top the last layer with more chocolate sauce.
    • Cover your molds and insert the popsicle sticks
    • Pop in the freezer for at least 5 hours but preferably overnight.
