Vegan Fried Green Tomatoes is the perfect late Summer recipe! It's a Soul Food classic that can be made traditional or in an air fryer.

I recently got an updated Ninja Foodi appliance!
If you are a reader of this blog, you know how much I LOVE using this machine. It's an electric pressure cooker, air fryer, slow cooker, oven, stove-top, steamer, and dehydrator all in one!
Be sure when you are air frying to NEVER use aerosol cooking spray in a can as it can leave residue on the air fryer basket. Instead add some oil in a Misto to protect your appliance.
Fried Green Tomatoes Ingredients
- Green Tomatoes: Unlike ripe red tomatoes used to make homemade tomato paste and plum tomato sauce, green tomatoes are unripe and very firm. Perfect for frying!
- Egg Replacer: This can be additional flour, ground flaxseed, or an actual egg replacer product.
- Cajun Seasoning: My homemade Cajun seasoning mix makes this recipe taste AMAZING!
- Apple Cider Vinegar: This is needed to make vegan buttermilk.
- White Spelt Flour: Any flour will work for this recipe, but I personally love spelt flour because it is higher in protein and much more easier on the digestive system!
- Plant Based Milk: Any plant based milk of your choice will work or you can make your own sea moss milk!
- Oil (typo in photo): I use grapeseed oil for frying this recipe but any oil with a high smoke point will do.
- Breadcrumbs: Gives it additional flavor and crunch to your fried green tomatoes.
- Yellow Cornmeal: Can you really do a traditional fried green tomatoes recipe without cornmeal? I think not!

Substitution, Cook, & Storage Tips
- All purpose flour will be find to work with this recipe if you don't have spelt flour. The additional 3 tablespoons can be substituted for an egg replacer or ground flaxseed.
- I use a homemade Cajun seasoning mix for this recipe because it's super quick to make up with all the spices I already have in my pantry. But you can buy your own mix if you prefer.
- This recipe is best stored in the refrigerator for up to 2-3 days. I do not recommend freezing this recipe. To reheat, I recommend putting them in an air fryer to keep the crispy.

Vegan Fried Green Tomatoes (Air Fryer Option!)
Ingredients
Tomatoes
- 3 medium firm green tomatoes
- salt
Vegan Buttermilk
- ½ cup plant based milk
- 1.5 teaspoon apple cider vinegar
Batter
- 1 cup + 3 tablespoon cup white spelt flour, divided note 1
- 2 tablespoon homemade Cajun seasoning, divided note 2
- ½ cup fine white or yellow cornmeal
- ½ cup fine dry bread crumbs
- grapeseed oil for frying

Instructions
- With your chef knife, cut unpeeled tomatoes on a cutting board into ¼ - ½ inch slices and lie on thick paper towels. (I personally do ¼ inch thick as I don't like my tomatoes too thick). Sprinkle slices with salt to draw out the water. Let tomato slices stand for 5 minutes.
- Next, combine the plant based milk and apple cider vinegar. Stir the milk and vinegar together in a measuring cup. Let the mixture stand at room temperature for 5 to 10 minutes until it slightly thickens and you see small curdled bits.
- While the salted green tomato slices and buttermilk is resting, grab three separate bowls for your batter mixtures.
- In the first bowl, combine 1 cup flour and 1 tablespoon of cajun seasoning. In the second bowl, mix together vegan buttermilk and 3 tablespoons of flour. In the third bowl, mix together breadcrumbs and cornmeal.
Skillet Frying Method
- Heat the oil in a skillet on medium high heat. Dip the green tomato slices in the flour mixture, then the buttermilk mixture, then the cornmeal-breadcrumb mixture.
- In the skillet, fry half of the coated tomato slices at a time, for 3-5 minutes on each side or until brown. Do not overcrowd. Repeat until all tomatoes are done and set the cooked tomatoes on paper towels to drain.
Air Frying Method
- Preheat the Ninja Foodi (or whatever air fryer you have) using the air crisp function to 400 F (205 C) degrees.
- Dip the green tomato slices in the flour mixture, then the buttermilk mixture, then the cornmeal-breadcrumb mixture. With your Oil Spritzer Mister, mist air fryer basket with oil and place 3-4 tomato slices in basket. Mist the tops with oil. Air-fry for 5 -6 minutes.
- Flip tomatoes over, mist with oil and air-fry 3-4 more minutes until it is nice and crispy. These fried green tomatoes are fantastic to serve with some vegan remoulade sauce or with some black eyed pea soup and air fried okra!
